    First oysters I had were lightly poached. I'll find that awesome recipe bac0n and I put together for Xmas.

    I like the "event" of eating them. Put some horseradish and lemon on it, talk with a good friend, and combine with a beer.... It's good. I like the salt waterless behind it.

    Had a great day making soups yesterday. Made an incredible jambalaya / gumbo mix (not authentic, but absolutely delicious), and a pozole rojo, with chicken.

    Both turned out so good. Dinner and lunch for the next few days.

    Yesterday's time in the kitchen yielded homemade Spanish rice, chile verde, and chile rojo.

    Making some chicken and beans tonight, and then we can combine it all in different ways for dinners and lunches for the week.

    Hell yeah that looks amazing.

    This may sound really shallow, but one the greatest things about immigration viewed as someone born here, is getting authentic foreign food. I love my Mexican neighbors, and they love cooking me stuff.

    It's so good. The chili itself is made by roasting tomatillos, and a variety of green peppers. I use Poblano, Anaheim, bell, and jalapeno.

    Meat is traditionally pork. I use a combination of shoulder and chop.

    Sometime I don't add any meat, and just eat the chili warmed up as salsa.

    About twenty five pounds of ground, two small tenderloins ( a meal each maybe), four back strap roasts, and just took one roast from the hind quarters and one pack of stew meat since we use the ground more than roasts / stew meat.

    So, we’ve got at least 33 meals for two there, probably more.

    In my experience, in that you don't eat it every meal three times a day....6 months? Depends how you have it processed, plus how it supplements your meals. If your living in the bush and it's your sole protein, a month or so? If you disperse the cut as supplement, 6-9 months maybe depending on size, maybe.

    Our menu:
    Hakenmueller Ham with honey/brown sugar/pineapple glaze, probably with a dash of hot sauce
    Turkey Breast with bourbon glaze, the rub goes on tonight
    Tyler Florence’s scalloped potatoes
    Good ol fashioned green bean casserole
    Cheddar bay biscuits, by request

    Wine, beer, Vikings Football. I’ll be cooking with a buzz.

    And I’m cooking for all of five or six people....

    My father in law and I are pretty much in the kitchen cooking all day. The menu:

    Turkey BBQ'd on the Traeger
    Mashed Potatoes & Turkey Gravy
    Roasted Brussels Sprouts w/ Gorgonzola Cream Sauce
    Oyster Stuffing
    Cranberry & Apple Relish
    Bourbon Sweet Potato & Apple Casserole w/ Pecan Crust
    And for dessert: Good ol' Pumpkin Pie (plus a scotch or two), a nice comfortable chair, and probably sleeping through a movie.
