I’ve made some damn good pork tacos with pineapple.

Take some pineapple rounds, toss them in sugar / brown sugar, and grill those bastards.

Grilled pineapple is more of a side / dessert. The pineapple for pork tacos is quickly browned in a pan.

Don't know if they have any tacqueria's up there, but that's where you'll find the best tacos and can apply the same thought at home.

Agree with everything above. Tacos are as much an empty canvas as are pizzas. You just need to tinkle outside the binkle!
