Honestly I've never been a fan of the blue skin look in any of the movies - I think Mystique looks too much like a person covered in gobs and gobs of make up. Due mostly to it being an awful shade of blue that was chosen for the first movie, and they kept with it for consistency's sake.

Movies or comics, I never really understood why a shapeshifting mutant would roll out in their blue skin anyways.
I thought they covered that pretty well in First Class - to be in a shape other than her natural blue, constant concentration and effort are required.
She can't possibly relax or be comfortable if she is in another form.

Plus there was that whole, "embrace who you are" motto that Eric was trying to teach her in First Class. It's why she ended up befriending him in the first place.
Yeah, it's more what duke said, really, which is the whole thing about her character. She can easily pass for normal and make life a lot easier for herself, but why should she?

Thematically yes. The X-Men movies wear their gay equality message on their sleeves.
But they do go out of their way to make it clear that even though she wants to appear normal it's not easy for her. There was a whole scene dedicated to showing how stress makes her start messing up and losing control.
