You're right about Coulson; I forgot about that (probably because on a larger scale they wasted no time bringing him back from the dead).
I do think there's a huge difference between bloodless violence (eg: Coulson, Darth Maul, off screen events, etc) and actual violence where you see consequences (the arm on the floor in Star Wars, blood in the snow in Bambi, etc).
A lot of the the things you see in Marvel pics and later Star Wars films would fit right into a Saturday morning cartoon. That's not what I'd call dark, especially when you surround those events with slapstick characters, one liners, and visual gags to take the edge off.
Looked at from that angle, the Mos Eisley scene in Star Wars is actually kind of fucked up. I'm not surprised that Lucas changed it, because it's far too cynical and dark compared to the rest of the film and especially the rest of the series.
