There's also a level of sexism at play. If we were talking about a 45 year old Cruise or Keanu, nobody in Hollywood would think about de-aging tech.
Replacing Theron also means signing a young performer for multiple pictures.

Just watched a few Captain Marvel clips. I think it might be marginally better but there's a racial element there. A lot of black people simply age differently with less wrinkles and Sam Jackson is one of them. Regardless, I think Miller is right that the de-aging doesn't work that well at this stage. I loved The Irishman in spite of the de-aging to be honest - I think the film was simply so good that it made me forget the effect.
It's a bold move to recast Furiosa, though. Theron absolutely owned that role.

Re: Captain Marvel. As much as Jackson’s de-aging is good, Clark Gregg’s looks worse than anyone in The Irishman, so it’s still a wash pretty much.

For all the trouble they went though with the first one, it seems a small headache to do a solid recast, or even do a casting call for a new talent.
But if you really wanted Theron back then I'd understand. I really wanted Mel back in Fury Road. Still, methinks Theron was not the star in Fury Road, it was George Miller.

It would seem strange for them to rely so heavily on de-aging technology considering Fury Road became a cultural phenomenon precisely because it eschewed CGI in favor of practical effects wherever possible and knew the audience could appreciate the difference.
